Do you love alfredo sauce? And crave it at least once a week? But, you are trying to be healthy and always here that pasta is so bad for you. Yeah, same.
But not anymore – I have a solution for you!
Cottage Cheese Alfredo Sauce. Now, don’t get your panties in a wad because I said cottage cheese. Trust me, I don’t like it either. But, that does not take away how dang good this recipe is.
This sauce is so creamy and delicious, but it’s also lighter and healthier than traditional alfredo sauce.

Ingredients Needed
- 1 TBSP Extra Virgin Olive Oil
- 2 TBSP Corn Starch – This is what will thicken the sauce.
- 1 C. Chicken Broth
- 1/2 C. Milk – Skim milk, almond milk, or 2% milk will work.
- 1/2 C. Cottage Cheese – For a less fat, choose 4%. Do not skip adding it to the blender. This will make it creamy.
- 1/4 C. Plain Greek Yogurt
- 2 tsp Minced Garlic
- 1/2 C. Parmesan Cheese
- Italian Seasoning, Pepper, Crushed Red Pepper, and Salt
How to Make Cottage Cheese Alfredo Sauce
First, in a large pan, heat your oil over medium heat.
Add your minced garlic, and cook for 1 -2 minutes.
Then, add in your cornstarch, and stir constantly for 1 minute.
While waiting, add a bit of your milk and cottage cheese to a blender, and blend until smooth.
Now, slowly whisk in the rest of the milk and broth until the sauce is smooth.
Increase the heat to medium-high, and bring the sauce to a simmer. Whisk constantly for 2 minutes.
Remove the sauce from the heat, and stir in the blended cottage cheese and Greek yogurt.
Lastly, place the creamy sauce back on the stove, and stir in your seasonings and parmesan cheese. Let simmer for another couple of minutes while whisking constantly.
Serve over chicken for a high-protein meal!

Leftover Cottage Cheese Alfredo Sauce can be kept in an air-tight container in the fridge for up to 5 days!
My best recommendation is before you warm up, add a splash of milk to give back the creaminess.
